Shrooms - Nature, paintings by Rain Longson

One one of my many, many hikes through the Delta Water Shed I found a log covered in these incredibly beautiful mushrooms. I am not a connoisseur of mushrooms. I was really curious! So I took pic's of the log and sent them off to a friend. He told me that they were called Angel Wing mushrooms, also known in grocery stores as Oyster mushrooms! Yummy, yummy mushrooms.

I have a great recipe for these mushrooms.

Ingredients (per person);

  • 1/2 to 1 cup - Oyster mushrooms, sliced thin
  • 1 slice smoked bacon - diced small
  • 1/2 - clove garlic (to taste)
  • 1/2 tsp. - olive oil
  • 1/2 cup - whipping cream
  • 1/4 cup - white wine optional
  • portion of linguine noodles

Saute garlic in olive oil, when the garlic is golden and transparent add bacon and continue to saute till golden - not crispy
Add mushrooms cook till soft
Add cream and wine
Cook down till thickened to a thicker creamy consistency

If you pick a lot of the mushrooms (don't forget to shake off the mushrooms over the area that you collected the shrooms - to leave the spores to grow more shrooms) and don't want to use them immediately dehydrate them and store in the freezer. Rehydrate using either broth or my personal favorite white wine.
